Love Remedy Soup Recipe



So, Spring has made its presence very apparent and I have noticed that many are experiencing similar reactions as me to the overwhelming amount of pollen present in the atmosphere. There is almost nothing more comforting than a hearty soup when one is experiencing the runny nose and itchy eyes that often accompany pollen season. Additionally, while this recipe is suggested for pollen season, it is of equally appropriate usefulness for flu season. I would pull this recipe out any time you or a loved one finds themselves in need of some comfort and healing in the form of a light and easily digestible meal.















INGREDIENTS


2 Person Portion


For larger Proportions, multiply recipe appropriately


*Keep The Pasta, Veggies, & Soup Separate to maintain the proper texture of various elements if you intend to use this recipe as meal prep. Ingredients in this recipe can become overcooked easily. Then, prepare ingredients appropriately before consumption.



2 Stalks Celery

1 Carrot

1 Cup of Mushrooms


4 Minced Garlic Cloves

1.5 inch Ginger, minced


2 cups of Pasta

2 Chicken thighs Diced into Quarter inch Pieces


Fish Sauce | 1 Teaspoon

Chili Oil | 1 Tablespoon

Sesame Oil | 3 Tablespoons

Coconut Aminos, Liquid Aminos, or Soy Sauce | 1 Tablespoon


1 tablespoon of Salt

1 tablespoon of cayenne

1 teaspoon of turmeric

1 teaspoon of cumin


1 Liter of Broth (your preference) I would suggest a bone broth as it is generally a more nutrient-dense broth


DIRECTIONS


Saute the minced Garlic & Ginger in Sesame seed oil until brown. Add broth and stir until all ingredients are mixed in. Then, add 1 teaspoon of fish sauce, 1 tablespoon of chili oil, 1 tablespoon of soy sauce or its replacement, and then 3 tablespoons of sesame oil. This will be your broth base.

Boil pasta until Al Dente.

Blanch chopped veggies in boiling water in a separate pot until they reach their desired softness.


Also, stir-fry chopped chicken thighs and when they are cooked through, add them to the soup. Then, add blanched veggies and pasta. Then, add the salt, cayenne, turmeric, and cumin,


Stir, and when the soup is simmered and the aroma of warmth and spice is finally inhaled, you will be prepared to consume your love remedy soup.
